    Matured in a temperature and humidity-controlled chamber for more than three months during which the master cheesemaker pampers and cares for the cheese by turning it over and brushing it with olive oil, to keep it soft until it reaches its optimum consistency, the outstanding flavour and pleasant aroma of good sheep's cheese
