Made from raw sheep's milk. It is an aromatic cheese, with a milky flavour, slightly spicy and slippery on the palate. The interior is slightly yellowish. And the rind is covered with natural fungus, flowery skin.

Pressed paste cheese with a brushed, flowery skin. It is matured for a short period of 2 months. Cylindrical in shape and made from Assaf sheep. The semi-matured cheese is both soft and intense, with a supple texture and a grainy texture. The raw milk gives the cheese its unique character. The salt enhances the round, broad and characteristic sheep's milk aspect.
