    Ibores cheese is one of the most emblematic products of Extremadura.  As we know it today, it has been produced in the geographical area of the Protected Designation of Origin (DOP) since ancient times.

    It is made with raw goat's milk and is presented in a rind rubbed with paprika. This cheese is characterised by goaty aromas with hints of vegetables and flavours. The paste is ivory-white, semi-hard, with a soft, buttery and moist texture, between friable and elastic, with small, not very abundant and unevenly distributed eyes.  The flavour is characteristic, buttery, slightly acidic, slightly spicy and salty, mildly goaty in the aftertaste, and very pleasant on the palate.

    For optimum conservation, Ibores cheese should ideally be stored between 8º and 13ºC.

    It is also advisable to wrap it in thin transparent plastic to prevent it from drying out, but not too tightly to avoid the formation of mould on the surface.

    For best consumption, it is recommended to take it out of the cold store 1 or 2 hours before consumption, so that it can be tempered, thus favouring its organoleptic characteristics.
