Approx. 250 g - 300 g of Quesos&Besos (Quesos y Besos) Olavidia artisan goat´s cheese, 2021 Best Cheese of the World, from the town of Guarromán in Sierra Morena (Jaén), Andalusia. Packaged in a wood box.
Olavidia is a soft cheese with lactic coagulation, made from Malaga goat's milk from its own herd, to which the milk is treated with slow pasteurisation.
The first thing we find in Olavidia is its mouldy rind with an intense aroma. Inside, we discover a creamy paste with aromas of yoghurt, a fresh, citric and delicate taste, with a slight spicy bitterness. It also contains a core of ash from olive pits, which gives it a unique texture and a characteristic flavour.
Natural edible bark. Strong smell.
This cheese has been awarded the prize for the best Cheese of the World 2021 at the World Cheese Awards and Best Cheese of Spain in 2018 and 2022.
Origins: In 2016, the cheesemakers Silvia Peláez and Francisco Romero returned to their homeland, Andalusia, determined to reconnect with the rural world. There, they gave life to Quesos y Besos, betting on lactic coagulation cheeses. The Malaga goats of their family livestock are grazing in the southern mountains of Jaén, a true rural paradise. In these conditions, the goats produce milk of exceptional quality with which they make their artisan cheeses.
