The Carnaoli seeds were imported from northern Italy, from the Piedmont region, and cultivated in the rice fields of the Albufera Natural Park. by Molino Roca experienced farmers.
It is rich in amylose, which contributes to the firmness of the grain. It is dehulled, blanched and packaged in Molino Roca mill.
Aged in breathable sacks in its facilities in the Alto Palancia region, at an altitude of 450 m and an average temperature of 7º C with a relative humidity of 10% to achieve a highly dehydrated grain, increasing its absorption capacity, less stickiness and maximum flavour.
Special for sweet seafood rice dishes (arroces melosos) and risottos.
