The alubia verdina / faba verdina bean is a bean (alubia) with a unique emerald green color and a softness to the touch that can only be achieved by hand-picking each plant before it reaches maturity, laying it out in the shelter of sunlight and drying it with the coastal breezes of the Cantabrian summer.

All a handcrafted work that by color, flavor and combinations in the plate gives as fruit the only bean with aspirations of vegetable.

Its early harvesting preserves the chlorophyll from oxidation and gives it an optimal cooking quality, differentiating it from all other beans for its flavor, with a special pairing with prawns, clams, seafood or vegetables. However, in Asturias are very typical the verdinas with pantruque or emberzado, a sausage made of corn flour with roots in the homemade slaughter.
